Ingredients:

  • 1 cup Toor Dal (split pigeon peas)

  • 1 small Onion, diced (optional)
  • 1-2 Drumsticks (vegetable), cut into pieces
  • 1 small Carrot, chopped
  • 1 small Brinjal (eggplant), cubed
  • 1 tbsp Tamarind paste (adjust to taste)

  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • A pinch of Hing (Asafoetida)
  • 10-12 Curry leaves
  • 2 tbsp Oil or Ghee

Recipe:

  1. Cook the Toor Dal:
    Rinse the toor dal under cold water until the water runs clear. In a pressure cooker, cook the dal with 3 cups of water, turmeric, and a pinch of hing until soft (about 3-4 whistles in a pressure cooker or 30 minutes in a pot). Mash the dal lightly.

  2. Prepare the Vegetables:
    While the dal is cooking, boil the chopped vegetables (carrot, drumstick, brinjal) in a separate pot of water until tender but not mushy. Set aside.

  3. Make the Sambar Base:
    Heat oil or ghee in a large pot. Add mustard seeds and let them splutter. Add cumin seeds, curry leaves, and hing. Sauté for a few seconds until aromatic. Add onions (if using) and cook until translucent.
